I'm looking to expand my knowledge of web interfaces and interactions but there are so many books out there. What would be a good few to start with?

I highly recommend Magic Ink, by Bret Victor. It's not a book, but it's a must read (must study even) for any interface developer.
My favorite book on the subject is Don't make me think, by Steve Krug.
In addition to the already-mentioned "Don't Make Me Think!", Designing Web Usability by Jakob Nielsen, is also a good one to read.

About Face 3 is really good for general interface design and not directly targeted at the web. Amazing read, and has really helped in designing my projects.
Inmates is just a fun read period, and is great if you are trying to up sell interface designers to your bosses.
Not a book, but Jacob Nielsen has thirteen years' worth of thunderings on Web Usability. Very useful, occasionally shocking, always amusing. As well as his books, of course.
Not a book but http://webdesignfromscratch.com/ has lot of good basic information. You can also buy an ebook called 'Save The Pixel' from the site, although I haven't read it.
