I am looking for a customizable web shop / shopping cart platform (Could be open source or not). Does anyone have specific recommendations?

It might not be what you are after, but I really like the NOP Design one for sheer simplicity.
It is pure javascript, no server side code is needed. Consequently it is very simple to set up and has little overhead. It is ideal if you are taking your payments through PayPal or similar as you can let PayPal handle all the record keeping, emailing receipts etc.. If you are creating a simple shopping site, its ideal.
Its free for commercial use and open source.
