Instant Disposable G-mail addresses

I just encountered disposable g-mail addresses the other day. I didn't get how they worked. I thought e-mail addresses were just simple strings that were taken as they are.

Are these disposable addresses restricted to g-mail addresses only or are these common in practice? How is this implemented by the way?
