I have to build an e-commerce website, so I wondered how I would go about this? Are there any plugins like Paypal or something that will make the transactions a bit easier?

I rewrote most of the front end output to be semantic and XHTML compatible with the behaviour/presentation/content layered system. Took a long time, and a lot of nested tables to wade through.

There are many forks of osCommerce, perhaps more active or better. I am happy with Zen Cart, for example.

You could also try Magento but in my experience it is still buggy and bloated.
I recently proposed creating a cart for myself and typed up a big list of possible features, they're available on my blog (http://alexanderdickson.com/2008/10/thinking/)
Could be a starting point on what should/shouldn't be implemented for your situation.
