Anybody know of a GUI for querying / managing Microsoft SQL Server >= 2005 from Linux.

So far I've only found Razor SQL

There are data plugins available for eclipse.

If you're running gnome mergeant may be of use. It's very simple (and can be found in the repos for ubuntu).

Aqua Data Studio is on my list to try out, but I haven't gotten around to it. Plus its pricey.

I believe that "Aqua Data Studio" is also a popular one, and is also cross-platform (i.e. Java based).

It will work on any JDBC compatible database. I am using it right now with a connection open to my Oracle dev db, my SQL Server machine, and a production DB2 instance.
