Best book for getting started with professional Mac Development?

I'm looking for a best of breed book which will help me to get started with professional Mac development.

I would expect that professional development is done with Cocoa, Objective C and/or XCode. But it needs to be a single excellent book for a professional coder who is new to Mac development.
