My team is about to build a new product and we are using JBoss as the application server. There are other book posts on stackoverflow, but I couldn't find one that matched my needs.

Well, if you're just starting with JBoss and it's going to be a long(er) project, you might want to start with JBoss 5.0 (It's currently still less stable than desired for production, we're on 4.2.2) As for books, it really depends upon what you're wanting to do with it. There are some excellent reference materials on their site, especially for initial setup and use as an application server platform.
If you are interested in a book which shows how to gain hands-on experience rapidly on Java EE development using JBoss AS I'd suggest to have a look at the latest packt-publishing book JBoss 5 AS Development book
