Does any one know of a free/open source multi-platform program to create flow charts? It should run on at least Windows, Linux, and Mac OS/X.

Kivio runs on windows and mac, although it's only free on Linux (and it helps to have KDE).

If you don't mind it being programatic, as opposed to a graphical interface, then GraphViz can be used to create flowcharts.

Check this tool out, which uses ruby and graphviz to create flowcharts: wdot.rb

Dia is a free multi-platform drawing application with good support for flowcharts. It's based on gnome and has a free windows version and will compile on a mac.
