which are the good open source e-commerce applications that can be extended?

Depends on which technology you're using.

• osCommerce - large community, php
• dashCommerce - runs on SubSonic, .net

Both are nice products and have community-contributed extensions available.

You could also try a content management system such as Drupal with the ecoomerce of ubercart module.

If you're using Ruby, Active Merchant is the open source toolkit of choice.
