Using a Wildcard SSL Cert for subdomains in Plesk (IIS)

Question

I'm using Plesk running on Windows Server 2003. I have the following domain name on an exclusive IP, for which I have purchased a Wildcard SSL certificate from RapidSSL:

webvitality.eu

This works fine in both http and https. Should display "Web Vitality Dev Server". Now I have the following subdomain:

garyparkerhearing.webvitality.eu

This works fine in http, but when I view it in https, it displays the content for webvitality.eu, instead of garyparkerhearing.

The SSL doesn't throw up any errors, so appears to be working fine. RapidSSL assure me it's working fine, and its just a server issue I need to sort out. My webhost say its not possible to setup correctly in Plesk, and that I need to do it through IIS, however I'm not sure how to get it working. I have a VPS with root access.

Please help! Any geniuses out there?
