I'm trying to find information about open source projects that have been turned into commercial products - is there a term for it when a company does this?

Take a look at the term "Commercial Open Source Software" (Dirk Riehle). You might also find the chapter "Open Source as a Business Strategy" of Open Sources the book useful.
Overall you should look into "commercializing open source". I'm not sure if there's any more specific term out there.
