Use zero-width matching assertions:
String str = "la$le\\$li$lo";
System.out.println(java.util.Arrays.toString(
str.split("(?<!\\\\)\\$")
)); // prints "[la, le\$li, lo]"
The regex is essentially
(?<!\\)\$
It uses negative lookbehind to assert that there is not a preceding \
.
