I've often heard that when applying for an IT job it's a very good idea to be able to present any programs that you have written to show your potential employer your abilities/accomplishments. What kind of programs do most employers value most? I'm sure that it obviously depends on the type of job that you're applying for, but in general what are some good all around ideas that most employers would value?

Employers will appreciate completed projects. Those you have started and have finished not abandoned in the middle. If you have active users who give you credit it's even better.
Alternatively, if you took some open source project and changed/improved it, it could show your ability to get around in other people's code and continue their work. Also a valuable assets for most programming jobs.
That is of course provided the employer is smart enough to pay attention to your achievements. Some sad ones do not value anything one did outside of the office walls. But you'd better leave those employers to themselves.
