Have you tried the various tutorials at Lars Vogel's site? He has well-written step-by-step tutorials even about RCP appliations.
Other sources may be the Eclipse Corner articles and the built-in Eclipse help.
For more concrete questions I may be able to suggest other sources, but only these came into my mind now.
