I Think There is no Spring-MVC book yet. But There is a really good introduction right here about Spring 3.0. And you can download if you want. By Using Spring reference documentation and The slide provided above, I am sure you can have a good insight about Spring MVC 3.0.

About the only thing out there at the moment is Spring Enterprise Recipes, but updated 3.0 editions of Pro Spring and Spring Recipes seem to be in the pipeline.
