Could someone recommend a good and inexpensive software synthesizer which generates really good piano sound (sample-based); support for other instruments is not required. OS: Windows or MacOS. Java interface would be a great asset.

A: 

Pianoteq is by far and away the best piano synthesizer around, and it's not even sample based. Instead, it is written using physical modeling, and the results are quite impressive.. you can check out demos on the website or download a demo version of the plugin. It is available as a VST/AU plugin and standalone application, so you need a java VST host such as jvsthost to control it programmatically.

Alternatively, you could find some type of java MIDI interface and send your notes to the plugin with that.
