Are there any best / recommended practices when moving an existing BizTalk 2004 application to BizTalk 2009?

BizTalk 2009 (and prior to that BizTalk 2006) introduced various significant improvements to core processing logic - everything related to error handling, for instance. During our migration process we would like to take the opportunity to realign the existing BizTalk 2004 solution(s) with the new improved functionality in later versions of BizTalk.

Are there any sources of information (apart from the "What's new" documentation for each later BizTalk release) which point out the major value-generating activities we could undertake during our move?

[Note: We are going to completely redeploy our stack from scratch into a brand new, different infrastructure, so we will not face any issues with existing server deployments.]
