The app was made by Facebook and it's compiled so good luck getting to the source code of how they did it.
Odds are there's a separate server for parsing posts from iPhones and the app sends posts through that server. I can find nothing online about how to add the "via Facebook for iPhone" when posting from a PC, but if you want to be the first to figure it out I would recommend installing a simple packet sniffer to read and record all packets entering and leaving your network, then use an iPhone or iPod Touch over Wi-Fi (disable 3G) and submit a post.
Figure out what IP address it's going to and try to read the header and figure out what user-agent it's using. Also, make note of the format of the post.
After this, send a packet of the exact same format with the same header to the same IP from your computer. In linux this is done by writing to eth0, but I'm not sure how to do it in Windows (you probably need to find a freeware program which allows raw packet writing)

It's only possible to add "via ..." to posts by using the particular application. It's impossible to "fake" it effectively.
Why not save up and buy an iPod Touch? Then you can do it as much as you like.
