How to save a copy of outbound messages in IIS's SMTP server?

I'm needing to keep a copy of messages that has been sent by IIS's SMTP server. I've been unsuccessfully trying to find the option within its management console, plus I've had similar luck searching the feature on the official documentation. Any idea or workaround would be much appreciated. The operating system is Windows 2000 and I'm not quite sure about the IIS version.

You actually have to use an SMTP Sink and create the output file there. You can see some examples of this in my Exchange Spam Assassin sink.

This is relatively older VB 6.0 code, but there are examples of using .net interops and straight VBScript.
