Does anyone know if it is difficult to change your company entity and tax id for an iphone app that has been submitted and approved?

It's not difficult to do. Go into iTunes Connect, and hunt around a bit, and you should be able to find the right email address to send the request to. It does take a while, especially if you're changing from an individual account to a company account.
