Nothing, but you must draw interface, i think, before you lay out it in interface builder. And while you drawing you need standard mac interface bits, like buttons, search fields etc. And the problem is, if where is a library of std mac controls bits in png format maybe to use while drawing in Fireworks or Photoshop. Or maybe there is other technics... sorry for my english

Interface Builder supports dragging and dropping interface elements on a window pretty easily. I'd go with pen and paper/whiteboard first and then, Interface Builder.

Most Information Architects I know use Omnigraffle for wireframing on a mac. This can also be used to make very basic clickthrough prototypes. You can get some Mac style templates from Konigi.com
