Is there a good (FOSS) screen recorder that can be used to make training videos easily?

Project Jing!

CamStudio and Wink are both good choices. But I preffer Project Jing from TechSmith, the makers of CamTasia and SnagIt.

It's free and it works great, I have only good thing to say about it. It can take screenshots and record screencasts. It's available for PC and Mac, with build it sharing capabilities.
